Tummy, we were supposed to go to the CIA a few weeks back but they closed during the last big snow storm we had. I live about 20 minutes away from them. If you do go there you may want to make an all day trip of it. The FDR estate, Vanderbilt mansion, Mills Mansion, ValKill (Eleanor Rosevelt's place), Samuel Morse estate, Marist and Vassar Colleges and other interesting places are well within 20 minutes of the Culinary. And if you go during late August there's the Dutchess Country fair. btw, make reservations if you're going to the Culinary.

I can't tell exactly from your route but did you get to stop in at West Point? Not sure how restrictive they are after 9/11 but it's a wonderful place to visit, full of historic memorabilia.
